Recipe: Baked Matcha Donuts

When life gets you down, all you need is really a box of matcha donuts. On a whim and out of daydreaming of doughnuts for far too long, I finally got around to buy a donut pan and make my own donuts for the very first time. They came out better than I expected!

Most likely, this matcha donut recipe is the healthiest you can find in the interwebs because I used high-grade matcha from Taiwan, extra virgin coconut oil (to substitute butter), coconut sugar (instead of white granulated sugar), almond milk (instead of regular milk), and apple cider vinegar (instead of white vinegar). These donuts are baked instead of deep fried. So without further ado, join me in this adventure so you can get all the goodness in life without the guilt! 
Easy recipe hard to get wrong. Mix the dry and then wet ingrediets and start piping to the donut pan.

Couldn't wait for the glaze to settle so took a bite immediately ha!

Settling the glaze. To glaze properly, make sure you use the smooth side on the pan and swirl 3-4 times in the glaze. Be generous!

Matcha Doughnuts

Ingredients

  • 1 1/4 cups flour
  • 1/2 cup coconut sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp matcha green tea powder
  • 2/3 cup melted coconut oil
  • 1/2 cup almond milk
  • 1 egg
  • 1/2 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • Glaze:
  • 1 cup powdered sugar
  • 1 tsp matcha green tea powder
  • 2-3 tbsp hot water

Instructions

  1. Preheat oven to 350º F. Mix the flour, sugar, baking soda, salt, and matcha powder together in a bowl.

  3. In another bowl, mix together the wet ingredients (coconut oil, milk, egg, vinegar and vanilla). Now, mix together the wet mixture with the dry mixture and stir until it is combined.
  4. Now put the batter into a piping bag and squeeze it into a donut pan. If you don't have a piping bag, you can use a ziplop bag and cut the tip. Pipe each donut about ¾ of the way full and bake at 350º F for 10-12 minutes.
  5. After it's done baking let it cool completely on cooling rack while working on the glaze.
  6. Mix together the powdered sugar, matcha powder and hot water in a bowl. Look for a thick consistency. If it's too thin then simply add a little more powdered sugar. When the donuts are completely cooled, dip the molded, round bottom side into the glaze, place it on a cooling rack, and let the excess drip onto the baking sheet.
Yield: 6 donuts
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 12 mins.
Total time: 27 mins.

The next day, I heated one donut for 10 seconds in the microwave and paired it with my favorite matcha latte with almond milk.
